Salata cu leurda (Wild garlic salad)

O salata de primavara. Cu multa verdeata. Si cu leurda. Pentru cine nu e familiarizat, leurda este o planta care apare primavara si are un gust de usturoi. De aceea se mai numeste si usturoi salbatic. Are multe proprietati terapeutice, printre care si cel depurativ. De aceeea primavara e recomandata o cura de 4 saptamani cu leurda proaspata. Cea uscata nu mai are aceleasi proprietati.

Leurda arata asa



Ingrediente:
  • 1 salata verde
  • 1 legatura leurda
  • 3 ridichi
  • 2 fire ceapa verde
  • 2 linguri ulei de masline
  • zeama de la 1/2 de lamaie
  • sare dupa gust
  • 1 lingurita seminte de nigella
Cum se face
  • Se spala bine toate verdeturile
  • Salata verde si leurda se taie (sau se rup cu mana).
  • Ridichiile si ceapa se taie felii
  • Se amesteca toate cu sarea, uleiul si zeama de lamaie
  • In final se presara semintele de nigella


English version

Today I made a spring salad. With wild garlic. Who is not familiar, wild garlic (also known as ramsons or bear's garlic) is a herb that appears in spring and taste of garlic. The leaves are edible, and can be used as salad, herb, boiled as a vegetable, in soup, or as an ingredient for pesto. It is known for its spring tonic qualities. For best results, in spring is recommended to eat it for 4 weeks, fresh, because the dried one loses its properties.
 


Ingredients:

  •      1 lettuce
  •      wild garlic 1 bunch
  •      3 radishes
  •      2 green onions
  •      2 tablespoons olive oil
  •      juice from half lemon
  •      salt to taste
  •      1 teaspoon nigella seeds
How To

  •      Wash all herbs well
  •      Cut lettuce and wild garlic  (or tear by hand).
  •      Slice radish and onion
  •      Mix all with salt, oil and lemon juice
  •      Finally sprinkle the seeds of nigella

Muffins cu rosii uscate la soare (Sundried tomatoes muffins for breakfast)

Nu sunt singura care considera ca cel mai greu este sa faci ceva creativ pentru mic- dejun si pentru pachetelul pe care il iau copiii la scoala. Din cate stiu eu toate prietenele mele, care evita sa manance sau sa dea copiilor mezeluri, au aceasta problema. De aceea  m-am gandit ca azi briosele mele sa nu mai fie dulci, ci sarate. Si pentru primele de acest fel am folosit ingrediente pe care eu le iubesc mult: branza si rosii uscate la soare. Aceste rosii pot fi cumparate in borcane, conservate in ulei de masline, in orice hipermarket. Sunt foarte gustoase, mai ales cand nu ai la indemana rosii proaspete.


Ingrediente:
  • 500 g faina
  • 1/2 lingurita praf de copt
  • 1/2 lingurita bicarbonat de sodiu
  • 150 g unt, topit
  • 2 oua
  • 200 ml kefir (eu fac in casa) sau iaurt
  • 200 g branza, rasa
  • 1- 2 lingurite de sare (in functie de cat de sarata e branza)
  • 1- 2 lingurite piper
  • 100 g rosii uscate la soare, taiate cubulete
  • putin cascaval ras, pentru pus deasupra
  • optional:ce alte ierburi mediteraneene iti plac
Cum se face:
  •  Pregateste tavile de briose. Incalzeste cuptorul la 190 C
  • Amesteca bine faina cu sarea, piperul, praful de copt, bicarbonatul de sodiu, ierburile si branza rasa


  • Cu un mixer bate ouale, apoi adauga untul.
  • Amesteca 1/2 din kefir
  • Pune 1/2 din amestecul de faina. Amesteca.
  • Adauga restul de kefir si faina, amestecand dupa fiecare.
  • Pune rosiile uscate taiate 

  • Amesteca cu o lingura.
  • In fiecare hartie de briosa pune cate o lingura de coca. Pe deasupra presara cu cascaval ras

  • Coace 20 minute
  • Raceste briosele pe un gratar.
  


English version

This time I baked savory muffins.  For breakfast, but also for my son's lunch box.

Ingredients:

     * 500 g flour
     * 1/2 teaspoon baking powder
     * 1 / 2 teaspoon baking soda
     * 150 g butter, melted
     * 2 eggs
     * 200 ml yogurt
     * 200 g cheese, grated
     * 1-2 teaspoons salt (depending on how salty is the cheese)
     * 1 to 2 teaspoons freshly ground pepper
     * 100 g sun-dried tomatoes, finely diced
     * some grated cheese, to put on top
     * Optional: What other Mediterranean herbs you like

How To:

     * Prepare muffin trays. Preheat oven to 190 C
     * Mix well the flour with salt, pepper, baking powder, baking soda, herbs and grated cheese
     * With a mixer beat the eggs, then add butter.
     * Mix half of yogurt
     * Put half the flour mixture. Mix.
     * Add the rest of yogurt and flour, stirring after each.
     * Put the chopped dried tomatoes
     * Mix with a spoon.
     * In each muffin paper put one tablespoon of dough. Sprinkle with grated cheese on top
     * Bake 20 minutes
     * Cools muffins on a rack.

Pui si porumb in stil Cajun (Blackened Cajun Chicken & Corn)

 Am inceput operatiunea de primavara: golirea congelatorului. Ultima punga de porumb fiert. Ce sa fac cu ea? am apelat la cartile mele de bucate si iata ce am gasit in "500 Greatest-ever chicken recipes".

Ingrediente pentru 4 portii:
  • 1 piept mare de pui, taiat in 4
  • 3 bucati porumb moale
  • 1 lingurita sare
  • 1 lingurita praf de usturoi
  • 1 lingurita piper praf
  • 1 lingurita chimion
  • 1/2 lingurita boia dulce (iute daca iti place)
  • 3 linguri unt topit
  • patrunjel verde tocat, pentru ornat
Cum se face
  • Incalzeste cuptorul  la 200 C. Pune gratarul inauntru.
  • Taie porumbul in bucati late
  • Amesteca intr-un castron toate cele 5 condimente. 
  • Unge carnea si porumbul cu unt, apoi freaca -le bine cu praful din castron.
  • Dupa ce s-a incalzit bine gratarul, pune carnea pe el. Sub gratar pune o tava, ca sa curga sucul de la carne.
  • Lasa 15 minute. Adauga porumbul si mai lasa 15 minute. Intoarce carnea si porumbul din cand in cand.
  • Serveste mancarea calda, presarata cu patrunjel verde

Briose cu gem (Strawberry jam muffins)

De data asta, fara ciocolata. :)

Ingrediente pentru 26 muffins
  • 300 g unt moale
  • 100 g zahar brun
  • 100 g zahar tos
  • 5 oua
  • 100 ml lapte
  • 400 g faina
  • semintele de la un baton de vanilie
  • 4 linguri de gem de capsuni
Cum se face:
  • Inmoaie putin gemul de capsuni daca e prea tare, pe foc. Poti adauga putin lapte ca sa-l inmoi.
  • Incalzeste cuptorul la 180 C
  • Cu un mixer bate untul 2-3 minute
  • Adauga zaharul si bate 3 minute
  • Adauga ouale unul cate unul, amestecand dupa fiecare.
  • Adauga vanilia si jumatate din faina. Amesteca
  • Adauga laptele, apoi restul de faina. Amesteca dupa fiecare.
  • Pune cate 1 lingura de coca in fiecare forma de muffin. Deasupra pune cate o lingurita de gem. Umple formele cu coca.
  • Coace 15- 20 minute.

Ingredients for 26 muffins

     * 300 g soft butter
     * 100 g brown sugar
     * 100 g granulated sugar
     * 5 eggs
     * 100 ml milk
     * 400 g flour
     * seeds from a vanilla bean
     * 4 tablespoons strawberry jam

How To:

     * Melt the strawberry jam if it's too hard. You can add a little milk to soften it.
     * Preheat oven to 180 C
     * With a mixer beat the butter for 2-3 minutes
     * Add sugar and beat 3 minutes

     * Add vanilla and half the flour. Mix

Prajitura cu mure (Blackberries cake)

In lipsa fructelor proaspete, eu am folosit mure congelate. Prajitura pe care am facut-o este dulce - acrisoara si frageda, cu fina aroma de mure. Se poate manca foarte bine si ca desert la masa de pranz, cat si alaturi de o cafea.

Ingrediente pentru o tava mica:
  • 2 oua mari
  • 200 g faina
  • 100 g zahar brun
  • 100 g zahar tos
  • 100 g unt moale
  • 2 linguri esenta de vanilie naturala
  • 50 g mure 
  • 6 linguri cu lapte
  • 3 linguri zahar pudra vanilat
  • cateva mure, pentru ornat

Cum se face:

  • Incalzeste aragazul la 180 C.
  • Unge o tava de tarta cu unt si presar-o cu faina
  • Pune cele 50 g de mure (din care pastreaza vreo 10) si laptele intr-un blender si mixeaza bine
  • Trece sucul de mure printr-o sita fina.
  • Bate ouale cu mixerul, pana ce devin ca o spuma (cam 3 minute) 
  • Bate in oua zaharul, apoi untul pana ce e amestecat foarte bine
  • Adauga vanilia si jumatate din faina
  • Pune 4 linguri din sucul de mure, apoi restul de faina, amestecand dupa fiecare 
  • Toarna compozitia in tava. Presara cele 10 mure. 
  • Coace 35- 40 min, sau pana ce scobitoarea iese curata.
  • Lasa prajitura 10 minute in tava, apoi scoate-o si pune-o pe un gratar
  • Amesteca sucul de zmeura ramas cu zaharul pudra. Pune totul pe foc mic si lasa pana ce se leaga ca o glazura.
  • Toarna peste prajitura. Orneaza cu murele ramase




English version

     * Bake 35-40 minutes or until toothpick comes out clean.
     * Leave cake in pan 10 minutes, then remove it and put it on a rack
     * Mix the remaining raspberry juice with powdered sugar. Put everything on low heat and leave until it becomes a glaze.
     * Pour over cake. Garnish with remaining berries

Tocanita de pui cu vinete (Chicken and aubergine stew)

 Dupa cum va spuneam asta-vara, gradina mea a fost plina de vinete. Am facut tot felul de conserve, dar cea mai buna a fost "Conserva de vinete in suc de rosii". Azi am folosit doua borcane (ultimele) pentru o tocanita rapida si plina de aroma verii.

Ingrediente pentru 6 portii:
  • 1 piept mare de pui, taiat in bucati mici
  • 2 borcane de 800 g de vinete in suc de rosii (sau 2 vinete medii si 500 ml suc de rosii)
  • 2 cepe mari
  • 5 catei de usturoi
  • 6 linguri de ulei de porumb
  • 1 lingurita maghiran uscat
  • sare, piper dupa gust

Cum se face:
  • Toaca ceapa nu foarte fin si taie usturoiul felii
  • Incalzeste uleiul intr-o tigaie adanca si prajeste putin pe fiecare parte, bucatile de pui

  •  Adauga ceapa si usturoiul. Amesteca bine 2-3 minute, pana ce ceapa capata o culoare galbuie

  • (Daca folosesti vinete proaspete, pune-le si pe ele.) Adauga maghiran, putina sare si piper. Pune un capac si lasa 5 minute.
  • Adauga vinetele din conserva cu tot cu suc de rosii. 

  • Mai lasa 5 minute la foc mic, pana cand se formeaza sosul.
  • Se serveste cu mamaliga.


English version

As I said last summer, my garden was full of eggplants. I canned them in all sorts of ways, but the best was "Canned eggplants in tomato juice ". Today I used two jars (the last once) for a quick stew full of summer flavor.


Ingredients for 6 servings:

     * 1 large chicken breast, cut into small pieces
     * 2 jars of 800 g eggplant in tomato juice (or 2 medium eggplant, and tomato juice 500 ml)
     * 2 large onions
     * 5 cloves garlic
     * 6 tablespoons corn oil
     * 1 teaspoon dried marjoram
     * salt and pepper to taste

How To:

     * Chops onion very fine and slice the garlic
     * Heat oil in deep skillet and fry a little on each side chicken pieces
     * Add onion and garlic. Mix well for 2-3 minutes, until onions turn a yellowish color
     * (If using fresh eggplant,  put them now) Add marjoram, salt and pepper. Put a lid and leave 5 minutes.
     * Add canned eggplant with the tomato sauce.
     * Simmer 5 minutes over low heat until sauce is formed.
     * Serve with polenta.

Supa crema din praz si cartofi copti in cuptor (Roasted leek and potatoes creamy soup)

 In cautarea mea dupa noi retete de supa, am poposit zilele trecute pe blogul Alessandrei, de unde am imprumutat aceasta minunatie. Mi-a placut foarte mult ca ea nu a calit prazul si cartofii in oala, asa cum face toata lumea, ci le-a copt in cuptor unde au capatat un gust dulceag.


Ingrediente pentru 6 persoane:
  • 2 fire mari de praz, spalate
  • 5 cartofi medii, curatati de coaja
  • 6 linguri cu ulei de porumb
  • sare, piper dupa gust
Cum se face:
  •  Incalzeste cuptorul la 200 C (tare)
  • Taie partea alba a prazului in bucati de 5 cm.
  • Frunzele verzi, tari, care nu pot fi mancate, separa-le si spala-le bine.
  • Taie cartofii in bucati nu foarte mari.

  • Pune cartofii si partea alba a prazului intr-o tava, pe hartie de copt
  • Pune deasupra uleiul, sare si piper

  • Coace in cuptor 30 - 45 minute


  • In timpul asta fierbe frunzele verzi de praz, in 4 l de apa


  •  Cand totul e gata strecoara zeama de praz si pune in oala continutul tavii din aragaz, cu tot cu uleiul. 
  • Fierbe 20 de minute.
  • Paseaza cu un blender, pana cand supa devine fina.
  • Potriveste de sare si piper.
  • Serveste cu crutoane de paine.


English version

In my quest for new soup recipes, I arrived a few days ago on Alessandra's blog, from where I borrowed this one. I really liked that she did not saute leeks and potatoes in the pot, as everyone does, but roasted them in the oven, so they got a sweet taste.


Ingredients for 6 persons:

     * 2 large leeks, washed
     * 5 medium potatoes, peeled
     * 6 tablespoons corn oil
     * salt and red pepper to taste

How To:

     * Preheat oven to 200 C
     * Cut the white part of leek into 5 cm pieces.
     *  Separate the green leaves, that can not be eaten, and wash them well.
     * Cut the potatoes into pieces not too large.
     * Put the potatoes and leeks in a roasting pan on parchment paper
     * Add oil, salt and pepper
     * Bake in oven 30-45 minute
     * During this boil the green leaves of leek in 4 l water
     * When everything is ready strain leek broth and add the content of the roasting pan (including oil)
     * Simmer 20 minutes.
     * Blend well with an immersion blender until soup is smooth.
     * Add salt and pepper to taste
     * Serve with bread croutons.
