Supa cu galusti (Semolina dumplings soup)

This is a very easy soup, made from boiled meat, very good in winter. Because I like it so much,  I don't care if I stay in the sauna= kitchen even in summer. I have to eat it!

Facuta din rasol de vita, cu multe legume si galusti pufoase.
  • 2 rasoale de vita, medii
  • 5 morcovi medii
  • 2 cepe, medii
  • 1 telina mica
  • 2 radacini de patrunjel/pastarnac
  • 4 cartofi  mari
  • sare, piper dupa gust
  • galuste de gris 

Intr-o oala mare, pune la fiert carnea in apa rece la foc mare. Cand incepe sa fiarba da focul mic. Scoate spuma de cate ori e nevoie. 

Cand carnea e aproape fiarta, pune legumele (fara cartofi). Cand legumele s-au fiert, pune si cartofii (taiati in 2, daca sunt mari). Pune sare si piper, da un clocot si strecoara supa. In zeama fierbe galustile ca aici .

Serveste supa cu galusti. Carnea rasol o poti manca alaturi de legume cu unt si hrean

Ingredients for 6 servings

    * 2 beef shank, not very big
    
* 5 medium carrots
    
* 2 onions, medium
    
* 1 small celery
    
* 2 parsley root / parsnip
    
* 4 large potatoes
    
* Salt and pepper to taste
    
* Semolina dumplings 


In a large pot, boil meat in cold water on high heat. When it begins to boil lower heat. Remove foam whenever needed.When meat is almost cooked, put vegetables (excluding potatoes). When vegetables are boiled put potatoes (cut in two, if they are large). Season with salt and pepper, give a boil and strain broth. Boil dumplings in soup like this.Serve soup with dumplings. You can eat boiled meat with vegetables and horseradish butter
