Suc de rosii pentru iarna (Canned tomato juice)

 Aceasta este o parte din productia de rosii a acestei zile. Care s-a transformat, pana la sfarsitul zilei intr-un minunat suc de rosii. Eu am o msina speciala pentru facut suc de rosii, care separa pulpa si sucul de coaja si seminte. Ea arata asa:





 Este manuala, cam veche, dar rezultatele sunt foarte bune. Am cautat una electrica, dar nu am gasit pana acum. Dar am vazut (pentru cine este interesat) din asta cu manivela :D in hypermarketurile romanesti.
Daca nu gasiti masinarie din asta si nu va deranjeaza semintele, pur si simplu puneti rosiile in robotul de bucatarie sau blender si aveti sucul de rosii! 

Ingrediente:
  • rosii
  • borcane curate, cu capac

Prin urmare, sa vedem cum se face:
  • Se spala bine rosiile si se taie in doua. Se indeparteaza partile stricate.
  • Se dau rosiile prin masina speciala (de doua ori daca prima oara separarea nu s-a facut prea bine)
  • Sucul de rosii astfel obtinut se pune intr-o oala. Cand incepe sa fiarba, sucul face o spuma si se umfla destul de mult, asa ca nu umple oala. Lasa loc liber cam de 2-3 degete.
  • Fierbe sucul la foc mediu, pana cand isi injumatateste volumul.
  • Da focul mic si pune borcanele pe o tava metalica. Folosind o palnie umple borcanele cu suc de rosii fierbinte. 

  • Cu mare grija, ca sa nu te arzi, inchide borcanele bine cu capace. Infasoara-le in paturi si lasa-le asa pana ce s-au racit definitiv (poate dura 2-3 zile)
  • Sterge borcanele cu o carpa umeda, de orice urma de impuritati si pune-le in camara.
  • Sucul de rosii astfel obtinut se poate folosi la iarna sa faci o supa de rosii delicioasa!

 What you see in the second picture is part of the today's harvest. Which turned up, at the end of the day, in a tasty tomato sauce. I have a special machine, that separates the pulp and juice from the peel and seeds. It looks like in the 3rd picture.

  It is manual, rather old, but the results are very good. I looked for an electric one, but I didn't find so far.
If you can not find this machine and do not mind the seeds, put tomatoes in a food processor or blender and you have tomato juice!

Ingredients:
  •      tomatoes
  •      clean jars, with lid

How it's done:

     Wash the tomatoes well and cut in half. Remove damaged parts.
     Run the tomatoes through the special machine or blend them well in the food processor.
     Pour the juice in a very large pot. When starts to boil, the juice makes a foam and it swells a lot, so do not fill the pot.
     Boil the juice over medium heat until it halves the volume.
     Reduce the heat and put the jars on a metal tray (so the jars do not crack when filled with hot juice). Using a funnel fill the jars with hot tomato juice.
     With great care not to burn yourself, put the lids. Wrap the jars in blankets (or other thick fabric) and let them cool completely (may take 2-3 days)
     Remove jars and with a damp cloth remove any trace impurity from their walls. Store them for winter.
     In winter you can use this tomato juice to make a delicious tomato soup!
