Paine fara framantare cu seminte de floarea soarelui (No knead bread with sunflower seeds)

Am descoperit painea perfecta. Nu trebuie s-o framanti si nici nu dureaza zile intregi ca sa o faci. Are miezul moale si coaja crocanta. Ce altceva mai poti cere de la o paine?


Ingrediente:
  • 1 kg faina de paine
  • 14 g drojdie uscata (2 pliculete) sau 50 g drojdie proaspata
  • 700 ml apa calduta
  • 4 linguri ulei de floarea soarelui
  • 75 g seminte de floarea soarelui, crude
  • 1 lingurita sare
Cum se face:
  • Intr-o cana amesteca drojdia cu 100 ml apa, pana ce se dizolva
  • Intr-un castron mare pune faina, sarea si fa o groapa in mijloc. Toarna uleiul, drojdia si restul de apa. 
  • Amesteca bine  cam 3 minute, cu o lingura. Adauga semintele de foarea soarelui si mai amesteca 3 minute. In final coca este moale si destul de lipicioasa 

  • Unge un castron curat cu ulei si transfera coca in el. Acopera cu un prosop curat si lasa intr-un loc ferit de curenti de aer 1 ora, sau pana cand isi dubleaza volumul.
  • Presara cu faina masa de lucru. Cu ajutorul unei palete transfera coca pe masa, fara ca sa apesi, ca sa nu iasa aerul din coca. 
  • Presara cu faina coca. Tai-o in 20 de bucati, cat de cat egale. 
  • Presara o tava cu malai sau gris. Din bucatile de coca fa bilute pe care le pui in tava, una langa alta. Nu lasa loc liber intre ele, pentru ca fiind moi se lasa si nu cresc frumos. 
  • Eu am folosit forma rotunda cu arc, in care fac blatul de tort.

  • Acopera cu prosopul si lasa 1 ora, sau pana ce isi dubleaza volumul
  • Cu 45 de minute inainte de a baga painea in cuptor, incalzeste cuptorul la maxim (eu incalzesc la 250 C).
  • Cand bagi painea, micsoreaza focul putin (200 C)
  • Coace 45 de minute. 
  • Scoate painea si raceste-o complet pe un gratar metalic
  • Daca vrei sa ai o coaja moale, unge coaja cu apa rece cu ajutorul unei pensule. Acopera painea cu prosopul curat si las-o pe gratar pana la racirea completa



English version

I found the perfect bread. You don't have to knead and not have to wait for days to bake it. In 2 hours is ready. It has crispy crust and soft middle. What else can you ask from a bread?


Ingredients:

    
* 1 kg bread flour
    
* 14 g dry yeast (2 envelopes) or 50 g fresh yeast
    
* 700 ml lukewarm water
    
* 4 tablespoons sunflower oil
    
* 75 g sunflower seeds, raw
    
* 1 teaspoon salt
 

How To:

    
* In a cup mix the yeast with 100 ml water until dissolved
    
* In a large bowl put flour, salt and make a hole in the middle. Pour oil, yeast and remaining water.
    
* Mix well about 3 minutes with a spoon. Add seeds. Mix all three more minutes. Finally the dough is quite soft and sticky
    
* Grease a clean bowl with oil and transfer the dough in it. Cover with a clean towel and leave in a place away from drafts 1 hour or until doubled in volume.
    
* Flour your worksurface. With a pallet transfer the dough to the table with care, not to take out the air from dough.
    
* Sprinkle dough with flour. Cut it into 20 pieces, somewhat equal.
    
* Sprinkle a baking tray with corn meal or flour. Form balls from the pieces of dough and put them  in pan, side by side. Do not leave empty seat between them, that is let loose and do not grow well.
    
* I used the round arch, forming dough into a cake.
    
* Cover with towel and let an hour or until double in size
    
* With 45 minutes before you put bread in the oven, the oven heats up (I heat to 250 C).
    
* When you put bread, heat shrink less (200 C)
    
* Bake 45 minutes.
    
* Take a bread and cool completely on a metal grill
    
* If you want to have a soft, lubricated skin with cold water using a brush. Cover bread with clean towel and leave to cool completely on the grill

  • eu sunt mare fun al painii cu lingura!!! am observat ca daca lasi aluatul o zi in frigider are un gust si mai placut. Eu fac o portie , o pun la congelator si scot mereu de cat am nevoie.

  • Brandusa, eu sunt mare amatoare de paine cu seminte. Amatoare pentru ca mananc putina si imi place gustul semintelor Numai ca eu o fac integrala si uneori ii pun seminte de dovleac. Am sa incerc si asta, fara framantare sigur, ca sa vad cum imi reuseste. Eu am venit si cu un premiu la tine, in dar de primavara adevarata. Asteapta sa fie revendicat, daca-ti face placere.

  • eu n-am facut niciodata paine fara framantare, desi am mancat si mi-a placut n-aveam rabdare sa astept nush cate ore/zile pana se dospeste. Varianta ta rapida ma incanta.
